Introducation: 
紅鳳菜對人體益處多多,除了因大量鐵質改善貧血外,還能增強免疫力,但因為性涼,怕寒者可以搭配薑、酒烹調中和,尤其用熱油炒紅鳳菜更可以促進β胡蘿蔔素吸收。但體質本身虛寒者還是應該減少食用,另外腎功能有問題的患者因為其鉀含量較高,應該要控制攝取量並且建議汆燙方式烹調。
